Jean Delport

A Prept.Foundation ambassador, Jean's journey is a blend of culinary training in the Cape Winelands and Ireland, culminating in his dream of creating Restaurant Interlude. His unique culinary style fuses British and French techniques with his South African heritage, emphasizing local and foraged ingredients.

Tommy Banks

Champion of hyper-local, seasonal and sustainable food, Tommy Banks is one of the UK’s most celebrated chefs. As Chef Patron and Co-Owner, he leads the Michelin-starred The Black Swan, Oldstead and Roots, York, alongside the acclaimed pub with rooms The Abbey Inn, Byland.

Raised on the family farm in North Yorkshire, Tommy’s cooking is shaped by the land, with menus driven by produce grown, foraged and preserved from the Banks’ 160-acre farm and kitchen gardens.

Ben Murphy

London born and trained, Ben Murphy has spent his career working in some of the most demanding kitchens in Europe and the US. From Épicure at Le Bristol and Les Prés d’Eugénie in France, to Per Se and Eleven Madison Park in New York, and four formative years with Pierre Koffmann at The Berkeley, his cooking has been shaped by places where standards matter and consistency is everything.

Those years taught Ben the value of classical technique, restraint and judgement, knowing when to keep things simple and when to push a dish further. His food is built on experience, not trends, and focused on clarity of flavour and balance.

Tom Shepherd

Tom Shepherd is an award-winning chef, restaurateur, and entrepreneur, best known as the owner of his Staffordshire-based restaurant, Upstairs by Tom Shepherd, which earned its first Michelin star just four months after opening.

Discovering his true calling and passion for the kitchen as an 18-year-old apprentice, Tom has been fortunate throughout his career to refine his craft while working under, and alongside some of the most respected chefs in the UK - experiences that helped shape his own approach to cookery: flavour-led, thoughtful, precise, with a genuine passion and respect for ingredients.

Mark Tuttiett

In January 2019, Da Terra opened its doors, earning its first MICHELIN star within eight months, and its second in 2021. Da Terra connects ingredients, nature and people. As Head Chef of two MICHELIN star Da Terra in London, we're honoured to have Mark Tuttiett join us on The Staff Canteen Live theatre. Possessing a wealth of experience, he joined from Carousel and previously working also at Kitchen Table, The Typing Room and Alain Ducasse.
